Arroz caldo


Ingredients

    • 200 g (7 oz / 1 cup) white glutinous rice
    • 100 g (3 1/2 oz / 1/2 cup) jasmine or medium-grain rice
    • 1.7 kg (3 lb 12 oz) whole chicken, jointed into 4 pieces, bone in
    • 60 ml (2 fl oz / 1/4 cup) vegetable oil
    • 9 garlic cloves, 6 thinly sliced, 3 finely chopped
    • 1 large onion, finely chopped
    • 4 cm (1 1/2-inch) piece ginger, peeled and cut into julienne
    • 60 ml (2 fl oz / 1/4 cup) fish sauce
    • 2 spring onions (scallions), very thinly sliced
    • 6 hard-boiled eggs, peeled and halved
    • Sesame oil (optional) and 8 kalamansi or lime wedges, to serve

Wow. This was amazing. My new go-to cold weather comfort food. I followed the first commenter's instructions for doing it in the instant pot. I screwed up and threw all the garlic in the instant pot, which made it very garlicky, but it didn't matter. I still sliced more garlic to fry up because you need that crunch. Also drizzled red pepper sesame oil because we had it. OMG, so delicious.
The result is delicious, but I modified this recipe for the instant pot and it works great. So easy. I used 6 boneless chicken thighs instead of the whole chicken and used 6 (rather than 8) cups of pre-made stock. I started by sauteing the onion, garlic and ginger in the instant pot, and then just adding all the remaining ingredients (rinsed rice, chicken, stock, fish sauce) and cooking on the porridge setting for 25 minutes. You could also cook the rice in the oil as per the original recipe. While you wait for the instant pot, you can make the fried garlic, slice limes, boil eggs and chop the green onion. Once the instant pot is done, all you need to do is shred the chicken. Super easy, just as tasty as the original. I might increase the ginger next time, but I really love ginger.
I really enjoyed this. It may appear simple but the flavors are delightful and the texture is wonderful. The egg adds a really nice touch to an excellent meal. I will make this again for sure.

This was easy and so delicious. I cannot wait to make it again and again. An exciting substitute for anything you usually eat when you're not feeling great, e.g. chicken soup, pastina, etc.

Made it as is and my son adored it. He is dating a Filipino and this reminded him of a meal he had at her home. We had leftovers and I did add more spice when I warmed it up as well as lime.
Two important ingredients that flavor the dish better than a home-made chicken broth, are kasubha (Philippine saffron) and minced fried garlic.
This was delicious. I would double or triple the sliced garlic since it was easy and delicious. And double the scallion decorations. My husband wanted it a bit spicier, but it was fine for me. I used 1 and 1/2 cup arborio rice rather than two types of rice and a rotisserie chicken for convenience. Seemed fine. We'll make this again!
Delicious! Short on time so I used reduced sodium chicken broth and previously cooked chicken. Lots of flavor in this recipe- one of my favorites now!
